I am largely vegetarian as well, (meaning I am vegetarian until I visit my extended family, who doesn't care if I am or not) and I have to say that one of my all-time favorites is falafels.

A great recipe book for this kind of this is The Moosewood Cookbook. They mostly use vegetables, but have some recipes for fish. I have never used a cookbook so much as that one. Highly recommended.

Butternut squash soup! I love this because I take the squash, bake it for an hour and then puree it. I take half of it and thin it with breastmilk or water and then put in ice cube trays to make portions I can defrost for my 7 month old. With the other half I make soup for hubby and I. I dont have a set recipe - usually just saute onion and apple, mix it in with the squash along with stock (veggie or chicken), add some cream, sage, salt and pepper. Very healthy and filling!

I've started referring to myself as the "pretend" vegetarian, I've cut meat out of my diet, but milk, milk products and eggs are still around. Through my journey, I've discovered that I like veggie dogs more than I liked hot dogs (I was a weird one and didn't mind the odd barbequed hot dog).

I have a recipe for a vegetarian soup (with no tofu) if you are interested.

Good lineup! After about 1 year of trying to start and stick with meal planning we are beginning to have some success. I don’t know what is different but maybe having a new baby just makes going to the grocery store more than once or twice a week impractical. I am a vegetarian and my wife is not but we cook all vegetarian meals in the house. We have a number of vegetarian cookbooks and know of many sites on the web but usually end up just getting stuff from vegweb.com. They have tons of great recipes and many that are very kid-friendly.
