I finally took a picture of this…
what a great way to eat a potato…
Slice (not all the way to the bottom) and drizzle with olive oil and sprinkle of salt and pepper and a bit of smoked Paprika…
I have also made them with slices of garlic or onion between the potoato slices…
Bake for about 45 min at 350…

Okay there must be a trick I missed. We used yellow flesh potatoes since they’re what we had on hand but 45 min at 375 didn’t even cook them half way. I ended up slicing them through and cooking them some more. What kind of potatoes have you had success with (btw, I can’t eat red one)?

These are russets… My new oven is quite efficiant so I wonder if that has anything to do with it… Maybe try at a higher temp?
When I made them with slices of onion between the potato slices it helped keep the moisture in so maybe that would by nice to try with the higher temp also…
