I love pickled beets… especially the ones that my great grandma used to make… and my grandmother… and my mom… and well.. now me…
I asked my grandma for her mom’s recipe when she was here last and this week beets were cheap at .99 for 5lbs… so today I decided to make them…
10 lbs of beets In the pot…
boil for about 2 hours…
all cooked and ready to be peeled and sliced…
all peeled…
sliced… (aren’t they beautiful)
6 cups Vinegar, 3 cups Beet Juice and 4 cups sugar…
jars ready
All filled up…
processed for 30min in boiling water…
a dozen jars of pickled beets…

My mom used to make Harvard beets - canned beets with vinegar, sugar, and cornstarch, so the juice thickened to this clear red yumminess! I’ve never had pickled beets, they sound similar — and tasty!

I have never hear of them with cornstarch but yes, sounds about the same… I used to love when my mom opened a new jar of them… I can’t wait for mine to be ready…
