what’s for supper tonight?

I am getting so tired of asking that question…

even though I have bought the ingredients for the weeks meals I never seem to feel like eating or making the things I planned… It doesn’t help that I am feeling (and am) very picky on the most part… (no pasta, not too much rice, not too fond of tomato based recipes, not too fond of beans, don’t like bland etc…)

And well…. It has been two weeks now that I just don’t feel like eating meat… at all… so many of the dishes that often made it onto the meal plan are out… which gives me even less to work with… I have been scouring websites and blogs the last few days trying to find things that I feel like eating… but finding things that look good and are easy enough to make when kids need your attention is a bit hard…

And it doesn’t help that the boys are a bit reluctant to try new things… They did like the souvlaki I made last week, but didn’t want to eat the veggie burgers I made last night… though I have to admit that they were a bit dense for me also…
Tonight I am making BBQ seitan with mashed potatoes… we’ll see what they say….

Any meal suggestions out there?

You and I are the same on all those except I can eat lots and lots and lots of beans. I should pop a miso gravy in the mail to you and then you should make roasted veggies. Lots of them. Perfect supper. Beets, turnip, potato, yam red pepper, cauliflower…. Throw that on quinoa if you need more.

Veggie burgers- black bean or peanut or pumpkin seed, Best part is you need your mixer, right?

Pizza? (homemade with veggies and sun dried tomatoes and artichokes and… !)

Maybe you’re looking to hard for the perfect recipe?

Hmmm… I’ll brainstorm some more. It’s hard to leave out beans!

    mojavi…

    it really isn’t that hard…lol
I think I have eaten enough pasta in my life that I have become saturated… it just doesn’t appeal to me anymore… maybe one day…

    Annie…
Maybe I am looking too hard…lol
I think that I am looking for something specific though… I just don’t know what it is… lol
The roasted veggies sound good I would love to get some of that Miso sauce ;)

The veggie pot pie recipe from the vegan planet is great (though I always have problems with the dough!). That’s what we’re having tonight! Ok, the recipe is a little intense but it’s really good and you could use seitan instead of tofu or tempeh.
I also make the vegan mac and cheese from that cookbook too, except that’s pasta I guess, the serve it with broccoli.
I find tacos and burritos super easy and fun (for kids to put together!), plus you can use the veggie ground beef or refried beans.
    Hope that helps!

That pot pie is a good one, Greenteacher!

You know I always want to convince you, Paxye to make my shepherd’s pie but it has lentils. Sigh. Simon *must* get over that. It’s so good and tamari-ish.

I will have to try that pot pie… thanks for the suggestion!
Tonight I am making a really simple veggie soup… I am really glad that I am starting to like soup more because I am really enjoying it… especially with some freshly baked bread…

We couldn’t live without lentils! We put them in everything for extra proteins. Some kinds are so small (du Puy, for example) you don’t even notice them!
